Grilled Potato Chips/Chicken Chop with Black Pepper Sauce/Chocolate Banana Cake

Chicken chop came into my mind and i was goggling the web when i came across this Grilled Potato Chip and the Chicken Chop with Black Pepper Sauce, so decided to try it out.  But my Grilled Potato Chip turn out to be a failure and the Chicken Chop with Black Pepper Sauce, didn't turn out to be as tempting as those selling outside.


Grilled Potato Chips from Echo's Kitchen

Ingredients:
2 medium potatoes (Try to use the one with straight body)
1 tsp Butter (Melted)
1 tsp Olive Oil 

Seasoning:
a pinch of salt
a pinch of black pepper powder


1. Peel and clean the potatoes. Use a pair of chopstick or thick bamboo skewer, place one at each side of the potato to hold the potato together, the stick will prevent knife from cutting the potato all the way through. Now proceed to slice the potato to the thickness of your liking.

2. Preheat oven to 400F (205C). Mix together melted butter and olive oil and brush the mixture on the potato, do it twice if you wish.

3. Bake the potatoes for 45 minutes, turn the oven to broil and broil it for another 5 minutes or until the top part turn golden in color.

4. Season with some black pepper and salt before serving. 


Chicken Chop with Black Pepper Sauce ala Malaysian Style from Echo's Kitchen

Ingredients:
4 pieces of chicken thigh (deboned)

For Marinate of Chicken:
1 tbsp of ginger garlic paste (I omit this)
1 tbsp of tomato ketchup
1 tbsp of light soy sauce
1 tbsp of oyster sauce
2 tbsp of chicken stock
1 tsp of chili powder (I use curry powder as i do not have chili powder)
1 tsp of dark soy sauce
1/4 tsp of salt or to taste

For the gravy/Sauce:
1 tsp olive oil
1 tsp butter
1 tbsp all purpose flour
1/2 medium onion (Slice thinly) (I use a small can of button mushroom)
1 Small tomato  (diced)
1 cup of chicken stock
2 tsp of tomato ketchup 
2 tsp of light Soy Sauce
2 tsp of crushed black pepper 

1. Debone the chicken thigh and pound the chicken a few times using meat mallet or the back of your butcher cleaver.

2. Marinate chicken with all the ingredients listed under for marinate, marinate the chicken for at least 20 minutes, I did mine for 1 hour.

3. Meanwhile, prepare the black pepper sauce, slice and dice the tomato and onion.

4. In a sauce pan, heat up butter and olive oil, add the all purpose flour and quickly stirring using a whisk, when the flour turn yellowish in color, add sliced onion, continue to stir until onion turned translucent. 

5. Pour in chicken stock and a little water if you wish to have thinner gravy, stir well and bring to boil.

6. Season with soy sauce, tomato ketchup and black pepper. Cook until thicken.

7. Heat up a frying pan, drizzle a little oil, place the chicken pieces in the pan. At medium heat, cook the chicken few minutes each side until the chicken is cooked. Do not over cook the chicken otherwise it can be too chewy and rubbery.

8. Place the chicken on a serving plate, pour some gravy over it and serve with some side dishes of your choice.


Craving for muffins and wanted to make muffin, but lazy to scope into muffin cup, so make into a cake loft. Chocolate Banana Muffins from Sonia blog.

125g butter
100g caster sugar
150g cake flour (I used Self-raising flour as i do not have cake flour)
2 eggs (large)
1/2tsp baking powder (I omit this)
1/4tsp baking soda
2tbsp cocoa powder
100ml milk (I used 120ml as to finish it up the milk)
1/2cup chocolate chips
150g mashed banana
Some banana wedges (I omit this)

1. Beat butter and sugar until fluffy.
2. Add in the eggs one at a time, mix well
3. Sift in flour, baking soda and baking powder, combine well with milk.
4. Add in mashed banana and cocoa powder, mix well.
5. Last add in chocolate chips, combine well.
6. Scoop the batter in to the muffin paper liners to about 3/4 full. Then insert a banana wedge into the middle of the muffin. Repeat till all the batter has been used.
7. Bake in pre-heated oven at 180C for 25mins. (I bake for 60 mins)
